COCOA WINE
Cacao Wine is the fruit of a culinary and wine adventure, between LOV Ferments, François Chartier World LAB . We have meticulously selected the cocoa mucilage, exploring its complexities to highlight the aromatic freshness of this natural gem. Each stage, from fermentation to aging, has been carried out with deep respect for the ingredients and an unwavering passion for quality. The result is a cocoa pulp drink that challenges oenological conventions, suggesting a cocoa wine thanks to its notable similarities with traditional wine, thus opening new paths in fermentation.
EXCEPTIONAL COLLABORATION
In a creative and expert partnership, we teamed up with renowned winemaker François Chartier and his team at the Chartier World LAB to bring the innovative 'cocoa wine' to life. With vast experience in wine aromas and molecules, as well as in the world of cocoa, Chartier brought a transformative perspective that turned this collaboration into an exceptional experience. We fuse aromatic knowledge, cocoa tradition and the audacity to expand the boundaries of fermentation, creating a masterpiece that defies expectations and opens new horizons in beverage making and enjoyment.
SUSTAINABILITY AND DIVERSITY
With our Cocoa Wine we are reclaiming the role of other sources of sugar in the production of high-quality alcoholic beverages. By using cocoa mucilage, we are celebrating the diversity of flavors that nature offers us and that fermentation creates and corrects, while advocating for sustainable and planet-friendly practices. This wine is more than a drink; is a reminder of the importance of exploring new frontiers in beverage making.
